Cafes that print Chiang Mai or Bangkok on the menu are admitting they are curators, not roasters. That can be excellent — or it can be marketing.
The audit tests whether the partnership shows up in the cup, not just the chalkboard.
The partner-roaster model splits the work in two. A dedicated specialty roaster — usually based in Chiang Mai or Bangkok, where the green-bean trade and the roasting expertise concentrate — sources and roasts; the cafe focuses entirely on the bar. It is a sensible division of labour. Roasting well takes a machine, the volume to keep it busy, and the obsession to chase a curve; bar craft takes a different daily discipline. A cafe that knows it cannot do both, and says so on the menu, is making an honest choice rather than a lesser one.
When the partner is good and the bar is dialled, the result rivals a full in-house program. The risk is that the cafe is now one step removed from the bean: it inherits the roast it is given, and a great barista can only do so much with a tired batch. The cafes worth trusting are the ones that name their roaster and treat the relationship as a credential — a sign the sourcing was a decision, not a default.
An honest disclosure belongs here. The editors’ research could not publicly document which specialty roasters — Beanspire, Roots, Brave, Pacamara, Hillkoff and the like — supply specific Pattaya cafes. Those wholesale relationships are largely undocumented online, and confirming them means asking owners directly. Until that legwork is done, this page stays deliberately short.

Secret Café in Pratumnak brews a house blend from a professional Chiang Mai roaster and earned its place by being featured in Pattaya Unplugged’s search for the city’s best coffee — evidence that a bare-bones-looking spot can pour a serious cup when the bean behind it is right. Summer House sits below it as research-only: its coffee runs through an 8presso partnership, but the venue trades as a beach club by night, and the morning program needs verifying first. Expect this list to grow once owners have been asked the question the research left open.
